Pickled Radishes
I love this recipe! I gratefully received a jar of these from my friend and I have adapted the recipe slightly from hers.
Ingredients
Radishes! I have used the Easter Egg and Watermelon varieties in this jar.
120ml rice wine vinegar
20ml mirin
100g sugar or sweetener (I use sweetener. I add water to it till it weighs 100g)
Method
Slice the radishes. You can use a vegetable peeler, knife or food processor if you have the attachment. The thinner the better. Place in a sterilised jar.
Bring the remaining ingredients to the boil on the stove. Pour into the jar. Place in the fridge and enjoy.
